Harvest: beginning in October with hand picking in order to select the best grapes to start drying
Maturation and refinement: 12 months in concrete tanks 36 months in French oak barriques 2 months in bottle
Alcohol: 14.5%
Pairings: with red meats, game, aged cheeses and cured meats
Standard serving temperature: 14-16 degrees
